With more than three dozen core varieties of pizza—and scores of optional toppings—it’s difficult to decide which lavishly embellished version speaks to you: Louisville Slugger with pulled pork, Sesame Chicken with sweet chili sauce, protein-packed Meatlovers—or a classic Margherita, the essence of simplicity? Also consider a nostalgic Grandma Pie, made in the homey style that countless Italian-Americans enjoyed growing up. Nonnas, without access to hickory-fueled brick ovens, worked with what was on hand: a square black steel baking pan. Brushing with olive oil before hand-stretching dough to fit produces a thin, crispy, golden crust. A layer of mozzarella with tomato sauce spooned over top—then finished with fresh basil—completes this old-school masterpiece.
