In the Kitchen
An open-concept kitchen makes dining a voyeuristic experience, and a blazing hot pizza oven packs a dramatic visual punch. “A lot of places have brick ovens that are gas-fed, but this is a traditional wood oven,” says owner Josh Palmer. Mixed hardwoods create an irresistible aroma as pizzas decked out in artisanal toppings, from fresh mozzarella to black truffles, are pulled from the 800-degree inferno that puts a crisp finish on each sublimely thin house-made crust. This blistering environment also puts a fiery finish on other al forno dishes, including roasted Norwegian salmon, a house specialty served with roasted escarole, tomatoes and cannellini beans with a taggiasca vinaigrette.
