This farm-to-table restaurant scoots the dinner table to the edge of the pasture by sourcing ingredients from the sustainable farm and organic gardens on the 150-acre property. Rummaging through the pantry to make dinner here spells an alfresco shopping trip to the backyard, where a blooming garden of nature’s delicacies like heirloom tomatoes, arugula and heirloom fingerling potatoes are handpicked and paired with tender cuts of grass-fed beef, lamb, chicken, and pork from Glasbern and neighboring farms.
The menu revolves and evolves several times per season to showcase the most prized cuts, ripest finds, and freshest catches. An emphasis on country warmth and deep flavors result in hearty gems like their seasonal spin on Pork Chop – served with braised apple chutney, sweet potato mash, roasted brussels sprouts, and cognac pork
jus – for a relaxing winter supper.
