Q&A with Paolo Nota, chef/owner
After 32 years as a chef, what keeps you excited about cooking?
I enjoy creating new dishes and working with good products. After starting my career cooking for prime ministers and presidents, proving to my ego that I could cook at a certain level, it was time to share my knowledge with families.
