Tortelloni Veronesi

  • 2 T oil
  • 1/2 boneless chicken breast, diced
  • 4 1-oz. slices ham, cut into 1/4” thick pieces then diced into small cubes
  • 1/4 cup sliced red onion
  • 1/4 cup green peas
  • 4 large shrimp, cleaned
  • 1 1/4 cups heavy cream
  • 10 cheese tortelloni
  • Grated Parmesan for garnish


Heat oil in a large ovenproof sauté pan. Add chicken, ham, and red onion to pan and cook until onions start to brown. Then add the peas and shrimp, continuing to cook for 2 minutes. Stir heavy cream into the pan, followed by tortelloni. Place pan into an oven preheated to 350°F. Bake for 7 to 14 minutes, or until chicken and shrimp are fully cooked (white throughout). Remove pan from oven, pour contents into a bowl and garnish with Parmesan cheese.
