TexMex Omelet

2 oz. milk
3 eggs
1 + 1 T butter
1/4 cup onion diced
1/4 cup pepper diced
1/4 cup tomato diced
1/4 cup jalapeño
1/4 cup turkey diced
1/4 cup bacon bits
1/4 cup chorizo, diced
1/4 cup shredded pepper Jack cheese


In a large bowl whisk together the milk and eggs until frothy. In a large non-stick pan, melt 1 tablespoon of butter. Add onions, bell pepper and jalapeño stirring until translucent. Add turkey, bacon, chorizo and cook for 1 more minute, stirring.

Add another pat of butter and swirl around pan to melt. Add the beaten eggs, and swirl around pan to form a large circle. Turn heat to medium-low and cover with a lid for about 2 minutes. Checking that the edges are not browning. If they are, remove the pan from the cooktop and lower the heat. When the eggs are solid and cooked almost through, flip the entire circle, sprinkle with cheese and cook for one more minute. Roll or fold the omelet onto a plate and serve.
