The sous vide method of preparation allows hanger steak, a less familiar cut, to cook evenly throughout while remaining juicy, flavorful, and tender. A spreadable quenelle of house-made duck liver foie gras pâté adds indulgence, while a super-rich bone marrow demi-glace—simmered for 72 hours—dares you to lick the plate. Also find playful variations of pub fare standards that include fish, burgers, sandwiches, and “lots of bits and bobs to pick at.”
