The Mint puts a modern spin on it by using sous-vide chicken (traditional preparation calls for boiled poultry) with an accompaniment of pickled sofrito: onions, peppers, and garlic.
  • A makeover of classic Oysters Rockefeller proves that sometimes the remake is better than the original. Fried oysters in spinach Parmesan fondue topped with pickled onions and Japanese tobiko? Yes, yes, and yes. Oh, and it goes by Oysters Rock-A-Fella now.
