Mary’s Famous Cheesecake

Ingredients
Crust:
• 2 sleeves graham crackers
• 1/2 cup sugar
• 3 T butter, softened
Cheesecake Filling:
• 1 lb. ricotta
• 8 oz. cream cheese, softened
• 3 eggs
• 1 1/2 cups sugar
• 1/2 cup heavy cream
• 1 T vanilla extract
Directions
Pulse crust ingredients in a food processor until combined. Pour mixture into a greased 9-inch springform pan and pat into bottom until crust is firm. Set aside and prepare filling.
Place eggs, heavy cream, and vanilla in a food processor bowl and pulse until combined. Add ricotta, cream cheese, sugar, and vanilla and process until smooth. Pour filling over crust and bake in an oven preheated to 295°F degrees until center does not jiggle, about 1 1/2 hours. Remove from oven and cool to room temperature. Cover and refrigerate overnight before removing band, slicing, and serving.
