Coconut Milk Jasmine Rice

INGREDIENTS
- 1 cup jasmine rice, rinsed and drained
- 1 cup coconut milk
- 1 cup chicken stock
- 1 tsp. seasoned salt
- 1/2 tsp. curry powder
- 1/2 tsp. paprika
DIRECTIONS
Instant Pot method: Stir all ingredients together, cover and seal, and press “rice” button.
Cooktop method: Stir all ingredients together in a large saucepan and bring to a boil over high heat. Cover, reduce heat to low and simmer for 15 to 20 minutes, until liquid is absorbed and rice is tender. Fluff with a fork before serving.
Serves 4
