Steak Tartare

INGREDIENTS
- 16–20 oz. chopped filet mignon
- 1 egg yolk
Seasoning:
- 2 tsp. Dijon mustard
- 4 anchovies, chopped
- 2 tsp. ketchup
- 1 tsp. Worcestershire sauce
- Dash Tabasco
- Cracked black pepper to taste
- 1/4 cup canola oil
- 2 T cognac
- 2 minced shallots
- 2 T chopped capers
- 2 T chopped cornichons (small pickled gherkins)
- Few sprigs chopped Italian parsley
DIRECTIONS
Mix together all seasoning ingredients in a nonreactive bowl. Fold in chopped filet mignon. Mound in the center of plate and crack an egg yolk in the center.? Serve with gaufrettes (waffle-style potato chips), frites or toast points.
