Steak Tartare

  • 16–20 oz. chopped filet mignon
  • 1 egg yolk


  • 2 tsp. Dijon mustard
  • 4 anchovies, chopped
  • 2 tsp. ketchup
  • 1 tsp. Worcestershire sauce
  • Dash Tabasco
  • Cracked black pepper to taste
  • 1/4 cup canola oil
  • 2 T cognac
  • 2 minced shallots
  • 2 T chopped capers
  • 2 T chopped cornichons (small pickled gherkins)
  • Few sprigs chopped Italian parsley


Mix together all seasoning ingredients in a nonreactive bowl. Fold in chopped filet mignon. Mound in the center of plate and crack an egg yolk in the center.? Serve with gaufrettes (waffle-style potato chips), frites or toast points.
