Spicy Tomato Jam

- 10 large tomatoes, cored, peeled, and quartered
- 1 T crushed red pepper flakes
- 1 cup sugar
- Dash of cayenne pepper
- Salt and pepper to taste
Place all ingredients in a large, heavy saucepan or Dutch oven. Bring to a boil over medium heat, reduce to low, and simmer uncovered until volume is reduced by half, about 45 minutes to an hour. Remove from heat, cool to room temperature, transfer to one or more containers with lids, and refrigerate.
Note: The restaurant serves this on their Shrimp Toast appetizer (grilled shrimp with guacamole and spicy tomato jam on toasted pita). However, there are countless dishes that can be jazzed up with a spoonful of zesty sweetness. For example, try it on a burger topped with pungent cheese.
