Pineapple Salsa

INGREDIENTS

  • 2 1/2 cups fresh pineapple, 1/4-inch dice
  • 1/2 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1/2 T finely diced jalapeno,?seeds and membrane removed
  • 1/4 tsp. salt, or to taste
  • 2 T fresh lime juice
  • 1 T honey

DIRECTIONS

In a large bowl, mix pineapple with cilantro, onion, jalapeño and salt. In a separate bowl combine honey and lime juice, then stir into pineapple mixture. Serve immediately or refrigerate for several hours to allow flavors to blend. Use with tortilla chips or as a salad topping with grilled tuna.

(Yields about 2 1/2 cups)
