Peanut Butter Chocolate Chip Chickpea Bars

*Added protein to this dessert, makes this dessert nutritious and delicious.


  • 1 can chickpeas, rinsed and drained
  • 1/3 cup unsweetened peanut butter
  • 2 tbsp coconut oil
  • 2/3 cup low-sugar maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp apple cider vinegar
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ¾ cup dark chocolate chips or chunks


  1. Preheat oven to 350°F and line an 8 x 8 baking pan with parchment paper
  2. Add all ingredients to the blender except for the chocolate
  3. Blend until completely smooth and then stir in chocolate chips/chunks
  4. Transfer the batter to the baking dish and smooth into an even layer
  5. Bake for 25 to 35 minutes
  6. Allow the bars to sit for 1 hour before cutting to help them set
