- 6 peaches, peeled and diced
- 1/2 vanilla bean (split lengthwise)
- 1/2 cup water
- 8 oz. vanilla vodka
Combine peaches, vanilla bean and water in a saucepan and simmer for 10 minutes. Remove vanilla bean, purée contents of pan in a blender and cool to room temperature. Add vodka, pour into a jar, cover and chill thoroughly. This keeps in the fridge for up to 1 week.
