Peach BBQ Sauce

INGREDIENTS

  • 2 15-oz. cans sliced peaches, drained
  • 1 1/2 cup apple cider vinegar
  • 1 cup canola oil
  • 1/2 tsp. crushed garlic
  • 1/2 tsp. Dijon mustard
  • 1 tsp. cinnamon
  • 3 T lemon juice
  • 1 T Worcestershire sauce
  • 1/4 tsp. fresh ginger, grated
  • 1/2 tsp. black pepper
  • 3/4 maple syrup
  • 1 cup brown sugar
  • 2 T cornstarch + 3 T water, mixed into a slurry

DIRECTIONS

Purée peaches and combine with all remaining ingredients (except cornstarch slurry) in a large saucepan. Heat to a low boil, reduce to a simmer, and cook for 30 minutes, stirring occasionally. Whisk in cornstarch slurry and continue simmering until mixture thickens.
Chill overnight. 

Serving suggestion: Although perfectly paired with pork of nearly every kind—chops, ribs, tenderloins, and, of course, pulled pork sandwiches—try brushing this sweet-and-tangy sauce on grilled chicken or seafood. However, avoid burning by glazing the protein near the end of cooking.   

Yields about 1 quart
