Pasta Yandolino

  • 1/2 oz. olive oil
  • 1/2 tsp. garlic, chopped
  • 3 oz. grilled chicken, sliced
  • 1 oz. cremini mushrooms, sliced
  • 1 oz. tomatoes, diced
  • 2 oz. chicken stock
  • 1 oz. herb butter
  • 1 + 2 T feta cheese
  • 1 oz. spinach
  • 7 oz. rigatoni pasta, cooked
  • 1 T pesto-flavored bread crumbs
  • Salt and pepper to your liking


In a sauté pan heat oil, add garlic, chicken, and mushrooms. Sauté. Add tomatoes, chicken stock, herb butter and 1 tablespoon feta. Season with salt and pepper. Reheat pasta in hot water and drain. Add hot rigatoni to sauté pan. Add spinach, make sure not to overcook. Stir to combine. Place in a pasta bowl, towering in the center. Garnish with 2 tablespoons feta cheese and pesto crumbs.
