Mussels with Garlic & White Wine

INGREDIENTS

  • 1 + 1 T butter
  • 1 lb. mussels
  • 1 clove garlic, minced
  • 1 tsp. minced shallot
  • 1 cup dry white wine
  • 2 T parsley, finely chopped

DIRECTIONS

Put 1 tablespoon butter into a large sauté pan and place over medium-high heat. When butter has stopped foaming, add the garlic and shallot and sauté for a minute. (Be careful not to brown them!) Add mussels into pan and toss to distribute evenly. Sauté for 1 minute. Add white wine to the pan, cover and reduce the heat to medium and allow to cook for about 5 minutes, until the mussels open. Remove mussels to a serving bowl and add the remaining butter to the sauce, stirring until it thickens. Pour sauce over the mussels and sprinkle with fresh parsley to garnish.
