Moroccan Spice Blend for Chicken Thighs

INGREDIENTS
- 1 T ground cumin
- 1 T ground ginger
- 1 T kosher salt
- 2 1/2 tsp. ground black pepper
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. coriander
- 1 1/2 tsp. cayenne
- 1 1/2 tsp. ground allspice
- 3/4 tsp. ground cloves
- 6 oz. brown sugar
DIRECTIONS
Combine all ingredients in a medium bowl and store in an airtight jar. When ready to use, rub the mixture as needed onto chicken thighs before sautéing or baking. (Do not return unused spice blend to the jar after it has been exposed to raw chicken.) This makes enough for up to 30 thighs, depending on the size.
NOTE: Grilling is not recommended as the sugar will burn.
Yields about 1 1/4 cup
