Centro Meatballs

  • 5 lb. 80/20 ground beef
  • 3 oz. diced yellow onion
  • 4 whole eggs
  • 1/2 cup chopped parsley
  • 1/3 cup panko
  • 2 oz. grated parmesan
  • 1 T red pepper flake
  • 1 oz. fresh oregano
  • 1 oz. red wine vinegar
  • 1 T kosher salt
  • 2 T cracked black pepper
  • 2 T minced garlic


Place meat in a large bowl and mix remaining ingredients in a separate bowl.
Pour mixture over the ground beef, mixing until thoroughly combined. Portion into 4-ounce balls and place on a sheet tray covered in aluminum foil. Bake at 325°F until meatballs are at 155°F internally, approximately 25 minutes.
