Marinated Mushroom Salad

INGREDIENTS

  • 1 lb. small white button mushrooms
  • 1/2 cup chopped roasted red peppers
  • 1/4 cup chopped fresh parsley
  • 1 T chopped garlic
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 2 pinches dried basil
  • 2 pinches dried oregano
  • 2 pinches dried thyme
  • 2 pinches salt
  • 1 tsp. sugar 

DIRECTIONS

Trim stems from mushroom and wipe clean with a damp paper towel. Blanch mushrooms in boiling water for 5 minute. Drain and cool to room temperatures. Mix remaining ingredients in a large bowl and stir in mushrooms to coat evenly. Cover and refrigerate overnight before serving.
