Grilled Strip Steak with Sautéed Onions and Mushrooms

INGREDIENTS
- 4 8-oz. strip steaks
- 1 yellow onion, medium diced
- 1 lb. button mushrooms, sliced
- 1/4 cup butter, room temperature
- 1 clove minced garlic
- 1 T chives or scallions minced
- 2 T vegetable oil
- Salt and pepper to taste
DIRECTIONS
Season steaks with salt and set aside. Heat a large sauté pan, add the vegetable oil and onions; cook until translucent, about 5 to 7 minutes. Add mushrooms, season with salt and pepper, and cook until tender, about another 2 to 3 minutes. Place the butter in a small bowl and stir in garlic and chives until combined. Grill steaks to desired temperature, plate, and top with onions, mushrooms, and garlic butter.
Serves 4
