Gabe’s Melt

  • Butter as needed
  • 2 slices sourdough bread
  • Mayonnaise to taste (optional)
  • 1–2 slices cheddar cheese
  • 1–2 slices Swiss cheese
  • 2 eggs, cooked to liking (hard-over recommended)
  • 1/4 cup cooked spinach
  • 2 cooked bacon slices
  • 2 slices tomato


Heat a large skillet to medium-low heat. Butter one side of each slice of sourdough bread. (Spread mayonnaise on the opposite sides of bread as desired.) Place both slices of bread, buttered side down, onto skillet. Top one slice with cheddar cheese and the other slice with Swiss cheese. Grill for 2 to 4 minutes then place eggs, spinach, bacon, and tomato onto one of the bread slices. Flip the remaining slice onto the loaded slice and serve.
