Flourless Chocolate Torte
INGREDIENTS
Torte:
- 1/4 lb. bittersweet chocolate
- 1/2 stick butter
- 2 eggs
Meringue:
- 1 egg white
- Pinch of salt
- 5 T sugar
DIRECTIONS
For the torte:
Melt chocolate and butter in a double boiler. Set aside and gently warm eggs in the double boiler. Whip the eggs with an electric mixer until tripled in volume; fold in chocolate mixture. Pour batter into a buttered 3-inch ring mold and bake at 400°F for 6 minutes. Remove from oven and allow to cool before removing from ring.
For the meringue:
Whip egg whites with salt until frothy. Add sugar slowly and whip to a stiff peak.
To serve:
Top torte with meringue and toast with a culinary propane torch or place under a hot broiler until golden brown.
