Financier (Brown Butter Almond Cake)

INGREDIENTS

  • 3/4 cup sugar
  • 1/4 cup dark brown sugar
  • 1/2 tsp. salt
  • 4 egg whites
  • 1/2 cup all-purpose flour
  • 1 1/8 cup ground almonds
  • 1 tsp. baking powder
  • 1/4 lb. browned butter
  • 1/4 T almond paste
  • 1/8 T almond extract
  • 1 cup fresh chopped fruit (your choice)

DIRECTIONS

Whisk sugars, salt and egg whites until smooth and slightly frothy. Add flour, almonds and baking powder and stir until smooth. Add browned butter, almond paste and almond extract. Mix to combine and remove lumps. Refrigerate batter for 1 hour. Next, stir in your favorite fruit. Pour batter into a prepared cake pan until 3/4 full. Bake at 350°F degrees for 15 to 20 minutes or until set. Serve topped with your favorite ice cream and powdered sugar.
