Dorado Ceviche

INGREDIENTS

  • 4 oz. mahi mahi
  • 2 T watermelon, medium diced
  • 2 T cucumber, diced
  • 3 oz. watermelon-chili base (see below)
  • Salt and pepper to taste
  • 1 T chopped chives
  • 1 T chayote, fine julienne
  • 5 slices toasted baguette

Watermelon-chili base:

  • 2 cups lime juice
  • 4 Chili de arbol peppers, toasted
  • 8 oz. watermelon
  • 2 T honey
  • Salt and pepper to taste

DIRECTIONS

In a small mixing bowl, combine together the mahi mahi, diced watermelon, cucumber, watermelon-chili base, salt, pepper and chives. Place ceviche in a dish, garnish with the chayote and serve with the toasted baguette slices.

For the watermelon-chili base: Process all ingredients in a blender. (This makes enough for 8 servings of ceviche.)
