Dorado Ceviche

INGREDIENTS
- 4 oz. mahi mahi
- 2 T watermelon, medium diced
- 2 T cucumber, diced
- 3 oz. watermelon-chili base (see below)
- Salt and pepper to taste
- 1 T chopped chives
- 1 T chayote, fine julienne
- 5 slices toasted baguette
Watermelon-chili base:
- 2 cups lime juice
- 4 Chili de arbol peppers, toasted
- 8 oz. watermelon
- 2 T honey
- Salt and pepper to taste
DIRECTIONS
In a small mixing bowl, combine together the mahi mahi, diced watermelon, cucumber, watermelon-chili base, salt, pepper and chives. Place ceviche in a dish, garnish with the chayote and serve with the toasted baguette slices.
For the watermelon-chili base: Process all ingredients in a blender. (This makes enough for 8 servings of ceviche.)
