Chocolate Banana Bread Pudding

  • 3 loaves French bread
  • 4 large eggs
  • 6 large egg yolks
  • 4 cups heavy cream
  • 1 cup whole milk
  • 1 cup sugar
  • 9 oz. chocolate chips
  • 4 bananas, sliced


Slice bread into 1/2-inch cubes. Set aside.

Whisk together egg and egg yolks. Set aside.

In a large saucepan combine cream, milk, and sugar. Bring so a low simmer. Add chocolate; whisk until melted. Remove from heat and whisk in eggs.

Put bread cubes in a lightly greased 9×13-inch baking dish. Pour in cream mixture. Press down gently until cream has been absorbed. Cover and let rest for 2 hours.

Preheat oven to 300°F. Bake covered with foil for 1 hour. Remove foil, add bananas over top, and bake for another 45 minutes. When cooled, cover and refrigerate overnight. Slice as desired before serving. Optional toppings include freshly whipped cream or French vanilla ice cream garnished with a light dusting of cocoa powder.
