Chipotle Lime Vinaigrette
Presented by Pistachio Bar & Grille
- 1/2 cup red wine vinegar
- 1/3 cup honey
- 1 T fresh oregano, chopped
- 1 T kosher salt (or to taste)
- 1 tsp. fresh ground black pepper
- 1 T chipotle in adobo sauce, chopped
- 1 1/2 cups canola oil
Place all ingredients in a blender and process until smooth. Store covered in the refrigerator.
NOTE: The restaurant serves this with Mexican Cobb Salad.
(Serves 2 1/2 cups)
