Peanut Butter Chocolate Chip Chickpea Bars
*Added protein to this dessert, makes this dessert nutritious and delicious.
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/3 cup unsweetened peanut butter
- 2 tbsp coconut oil
- 2/3 cup low-sugar maple syrup
- 1 tsp pure vanilla extract
- 1 tsp apple cider vinegar
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
- ¾ cup dark chocolate chips or chunks
Directions
- Preheat oven to 350°F and line an 8 x 8 baking pan with parchment paper
- Add all ingredients to the blender except for the chocolate
- Blend until completely smooth and then stir in chocolate chips/chunks
- Transfer the batter to the baking dish and smooth into an even layer
- Bake for 25 to 35 minutes
- Allow the bars to sit for 1 hour before cutting to help them set
