Mint Pesto

INGREDIENTS
- 1 bunch Mint, picked
- 1 bunch Parsley, picked
- 1 cup Almonds, toasted
- 1 cup Raisins, soaked in water then drained
- 1 cup Red wine vinegar
- 1 cup Olive oil
- 1 T Curry powder
- 1 T Salt
- 1 tsp Pepper
DIRECTIONS
In a food processor, place all your ingredients together and pulse until it is combined but still slightly chunky.
This wonderful pesto, is served with our grilled yellowfin tuna, but will also pair nicely with other fish such as salmon and swordfish, and other meats like chicken, lamb and pork.
