Fish Tacos

INGREDIENTS
- 1/2 cup flour
- 1/2 cup panko
- 1/4 cup cornmeal
- 1/2 tsp. salt
- 1/2 tsp. white pepper
- 1/4 tsp. smoked paprika
- 1/4 tsp. chili powder
- 1/8 tsp. cayenne
- Coarse ground pepper to taste
- 1 lb. cod loin, cut in 8 pieces
- 2 eggs, beaten
To serve
- 4 taco shells
- Coleslaw
- Pico de gallo
- Lime-yogurt sauce
- Chopped cilantro
DIRECTIONS
Mix dry ingredients in a large bowl and set aside. Dip fish in the eggs, then dredge thoroughly in the breading mixture. (Or transfer the breading mix to a large bag, add fish and shake to coat.) Cook the fish by pan-frying until golden brown or bake in a 350°F oven for 7 to 10 minutes. Place two pieces of fish in each taco shell and add toppings to your taste.
(Yields 4 tacos)
