Blackened Salmon with Pineapple Salsa

INGREDIENTS
- 6 oz. Atlantic Salmon
- 1/2 oz. blackening seasoning (such as Chef Paul Blackened Redfish Magic)
- 1/2 oz. olive oil
Pineapple Salsa:
- 3 oz. diced pineapple
- 1/2 oz. diced sweet red pepper
- 1/2 oz. sliced scallions
DIRECTIONS
Generously coat salmon with blackened seasoning. Pan sear in hot pan with olive oil. Finish in a 350°F oven to preferred temperature. Combine pineapple, red bell pepper, and scallions. Assemble salmon on plate and spoon the salsa over the top.
