A high-tech “open flame” oven serves as Gio’s heart and hearth. Its fierce heat puts an authentic crispy-chewy finish on pizza dough crafted from imported “00” flour, milled for high temps. This blazing environment also roasts beets for salads and appetizers, fresh veggies for antipasta and smoky-sweet garlic bulbs that flavor countless dishes. Other oven-baked specialties include house-made sausage and family-recipe meatballs.

A progressive approach puts a modern twist on tradition, from the clean-lined décor to the bar that dispenses hip libations like signature house-infused cactus-pear vodka martinis.
