Stoke Honeycrisp Old Fashioned

INGREDIENTS
• 1/4 oz. Honeycrisp simple syrup (see below)
• 2 oz. Bail Hayden’s Bourbon
• Dash of cinnamon
• 1 large ice ball
• 1 slice dehydrated apple for garnish
Honeycrisp simple syrup:
• 8 Honeycrisp apples, peeled, cored, and chopped coarsely
• 1/2 cup water
• Pinch of salt
• 2 cups sugar
• 2 cups water
DIRECTIONS
Pour Honeycrisp simple syrup and bourbon in a mixing glass with a dash of cinnamon. Add an ice ball and stir briefly to chill mixture. Transfer the drink and ice ball to a rocks glass and garnish with dehydrated apple. Serve immediately.
To make Honeycrisp simple syrup: Put apples, 1/2 cup water and salt into a saucepan, bring to boil, reduce heat to low and simmer for 1 hour until the mixture resembles apple sauce. Remove from heat and cool until safe to handle, then strain into a bowl. In a large saucepan, warm strained apple liquid, sugar and 2 cups water over medium heat, stirring until sugar is dissolved. Reduce heat to low and simmer for 15 minutes. Cool to room temperature, transfer to a glass bottle or jar with a lid and chill until ready to use. Store in refrigerator.
