Spiced Lamb Meatballs

INGREDIENTS
- 1 cup panko breadcrumbs
- 1/2 cup milk
- 1 T salt
- 1 tsp. ground black pepper
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/4 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1 T paprika
- 1 T minced garlic
- 2 T minced shallot
- 1 egg
- 2 lbs. ground lamb
DIRECTIONS
Place panko and milk in a large mixing bowl. Add salt, pepper, oregano, thyme, cumin, cayenne, paprika, garlic, and shallot and mix well. Taste and adjust seasoning as desired. Add egg and stir until combined. (The mixture should be the consistency of a thick, wet paste.) Fold in the ground lamb until just incorporated. Wrap and refrigerate for 30 minutes. Scoop mixture into balls 1- to 1 1/2-inches in diameter and place 2 inches apart on a rimmed baking pan. Bake at 350°F for 15 to 20 minutes or until cooked thoroughly. Serve with a favorite dipping sauce or mustard.
(Yields about 30 to 40 meatballs, depending on size)
