Red Onion Relish

INGREDIENTS
2 medium red onions, diced
1/2 cup brown sugar
1/2 cup red wine
1/4 cup sherry vinegar
1/4 cup balsamic vinegar
1 sprig rosemary, minced
Salt and pepper
DIRECTIONS
Sweat onions in a large pan until translucent. Stir in sugar, wine, and both types of vinegar. Simmer mixture until nappe, the culinary term for a sauce consistency that coats the back of a spoon. In this instance, the result to be achieved is lightly coating the onions so they are completely covered with a thin, even layer of sauce. Turn off the heat and stir in rosemary before seasoning to taste with salt and pepper. When cool enough to handle, transfer to containers and store in the refrigerator.
Executive Chef Spencer Crawford recommends serving this with sandwiches, steak, chicken, pork or almost anything that can be enhanced by a boost of flavor.
Yields about 4 cups
