Giacomo’s Chicken Salad

INGREDIENTS
- 3 lb. cooked chicken breast, shredded
- 1/2 cup chopped celery
- 1 T ground black pepper
- 1 1/2 cups extra heavy mayonnaise*
- Salt to taste
*Made specifically for the foodservice industry by Hellman’s, Kraft, Blue Plate, and other brands, this super-rich version may also be purchased by home consumers who really love their mayo: It’s usually packaged in 1-gallon containers.
DIRECTIONS
Mix all ingredients in a bowl and serve as desired. The restaurant presents this salad with grilled crostini.
NOTE: This simple classic can be adapted in countless ways: For a refreshing summer version, stir in sliced red grapes, scallions, and fresh dill. In autumn, add chopped apple, dried cranberries, and toasted pecans. For a more exotic variation, stir in chopped mango, thinly sliced red Thai peppers (or chopped red bell pepper for a milder taste), lime juice, and curry powder. Or use your imagination—almost anything goes.
