Chilled Sesame Noodles

• 1 lb. lo mein noodles(or substitute with your favorite pasta)
• 1/2 cup creamy peanut butter
• 2 T tahini paste
• 1 T soy sauce
• 1/2 tsp. sesame seeds
• 1/4 cup julienned cucumber


Cook noodles, drain and set aside to cool. Mix peanut butter, tahini paste, and soy sauce in a large bowl and toss noodles in sauce. Refrigerate for 1 hour or serve at room temperature. Plate the noodles then top with sesame seeds and julienned cucumbers just before serving.
