Butternut Sauce

INGREDIENTS
- 2 oz. cooking oil
- 1 cup diced butternut squash
- 1/4 cup diced carrots
- 1/4 cup diced onions
- 1/4 cup diced celery
- 1-pint chicken stock
- 2 T butter (or more to taste)
- Salt
DIRECTIONS
Warm oil in a sauté pan over medium heat. Add vegetables and cook until onions are translucent. Stir in chicken stock, increase heat to bring to a low boil, then reduce to a simmer for 10 to 15 minutes until vegetables are soft. Puree until smooth and stir in butter to finish. Season with salt as desired. (At the restaurant, this sauce is swirled on a plate as a base for roasted Brussels sprouts and beef tenderloin. Extra sauce may be served at the table.)
