Avocado Salad with Cilantro-Lime Dressing

INGREDIENTS
- 1 head romaine lettuce, chopped
- 1/2 pico de gallo (also called salsa fresca; a fresh tomato salsa)
- 1/2 cup queso fresco, crumbled (also called queso blanco; a mild unripened cheese)
- 1 Hass avocado, cubed
Dressing:
- 1/2 cup lime juice
- 1/2 cup extra virgin olive oil
- 1/2 cup cilantro leaves, packed
DIRECTIONS
Line a salad bowl with a bed of chopped lettuce. Pour pico de gallo on the romaine, then scatter queso fresco and avocado evenly over the top. To make the dressing, process the lime juice, olive oil and cilantro in a blender until smooth. Pour the desired amount of dressing over the salad, toss gently and serve immediately. (Refrigerate leftover dressing for later use.)
