Apple Cider Vinaigrette
Presented by McCoole’s at the Red Lion Inn
INGREDIENTS
- 1 cup apple cider vinegar
- 1/4 cup honey
- 1/2 T fresh lemon juice
- 1 tsp. Dijon mustard
- Salt and pepper to taste
- 3 cups extra virgin olive oil
DIRECTIONS
Add vinegar to blender with honey, lemon juice, Dijon, and seasonings. Blend for 1 minute until mixed. Gradually add oil while processing on low, then blend for additional 2 minutes until smooth. Store in the refrigerator.
Yields 1 Quart
