Marinated Cucumbers

INGREDIENTS
- 2 lbs. cucumbers (preferably Kirby, which are unwaxed)
- 2 cups sugar, divided
- 2 cups salt, divided
- 2 cups white vinegar
- 1/2 cup apple cider vinegar
- Splash of hot sauce
DIRECTIONS
Slice cucumbers to your desired thickness and place in a large bowl. (The thicker the slices, the longer it takes for the flavors to infuse.) Use half of the salt and sugar to season the cucumbers. Allow them to rest for at least an hour. (Overnight is even better.)
In a separate bowl, mix the remaining salt and sugar, white vinegar, apple cider vinegar, and hot sauce until the sugar and salt have dissolved. Pour the vinegar mixture over the seasoned cucumbers and allow to rest for several hours or overnight. The finished cucumbers may be transferred to a sealed container and stored in the refrigerator.
While Marinated Cucumbers are a piquant accompaniment to a wide range of dishes, The Bayou serves them as an appetizer with tomatoes, onions, crackled bulgar and parsley.
