Asian Lettuce Wrap Chicken

INGREDIENTS
- 8 oz. boneless, skinless chicken breast, marinated in soy sauce and teriyaki sauce
- 2 oz. shredded carrots
- 1 oz. crushed toasted almonds
- 1/2 oz. sliced scallions
- Teriyaki sauce, to taste
- 4-6 leaves Boston Bibb lettuce
- Soy Sauce, to taste
- Wasabi paste, to taste
DIRECTIONS
Allow chicken to marinate in soy sauce and teriyaki sauce for 5 hours before grilling chicken until cooked through. Chill the chicken thoroughly, then dice and combine with shredded carrots, toasted crushed almonds, and scallions. Add teriyaki and soy sauce to desired taste. To serve, arrange the cup-shaped lettuce leaves on a plate and place a heaping spoonful of the chicken mixture on each leaf. Serve with soy sauce and wasabi.
