This house specialty, slow-cooked in white wine and brightened with oranges—the citrus cuts through and tames the gaminess of the lamb—includes plump Gaeta olives, which are meatier and less salty than other varieties. Fresh rosemary delivers an herbal punch, and a bed of creamy polenta soaks up all the succulent juices.
