While Executive Chef Brad Shive’s New American cuisine encompasses worldly flavor accents from Asia to the Mediterranean, the elevated fare remains familiar and approachable – and hugely appealing. One best-selling entrée, Cast Iron Veal Medallions, stars tender and juicy veal seared to medium-rare (or to preference), presented atop aromatic chorizo risotto. Asparagus and butternut squash purée bring color and textural contrast to the plate, and a drizzle of house-made red wine demi glace adds decadent indulgence. A rotating selection of high-quality Butcher’s Cut steaks range from prime bone-in Kansas city strip loin to a 16-ounce dry-aged rib eye, and more exotic, hard-to-find game meats such as antelope and elk will be making an appearance in the near future.
Temptingly accessorized appetizers run the gamut from seafood and meat to vegetarian items, including Roasted Beets with shallots, horseradish crème fraîche and taro chips (see recipe on page 96). Two long-standing favorites, Crab & Mango Spring Rolls and Chicken Dumplings, are also served at sister-restaurant ZEST. The recent relaunch of lunch incorporates diverse sandwiches on the midday menu.
All of these choices may be savored in the ambiance of your choosing: The easy-going elegance of the original vintage restaurant and bar attracts a business-casual crowd, and the industrial-rustic chic vibe of the airy loft, which includes mezzanine dining and a wrap-around bar and lounge, provides more casual socializing. Glass walls on the year-round covered porch fold back for seasonal open-air dining and lead to a patio. An adjacent tent offers additional dining space and can host private events when inviting spring weather arrives.
To celebrate Grille 3501’s twentieth anniversary, a trio of “Throwback Martinis” from the original drink menu will be quenching yesteryear thirsts. The signature quaffs include The 3501, Brambleberi, and Chocolate Covered Pretzel. Cheers!
