Roasted Beets

INGREDIENTS
4 medium-size beets, washed
1/2 small shallot, diced
1/4 cup capers, chopped
2 T extra virgin olive oil
1 tsp. thyme, chopped
1 T Dijon mustard
1 tsp. salt and pepper blend
1/2 cup lemon juice
DIRECTIONS
Roast beets in a 350°F oven for 2 hours or until fork tender. Cool to room temperature then chill thoroughly. Peel beets and grate on a cheese grater. In a large bowl, mix beets with remaining ingredients. Cover and refrigerate. Serve as a dip with your preference of chips. (Grille 3501 pairs this with taro chips.)
