Red Pepper Jam

INGREDIENTS
- 2 medium red bell peppers
- 1T oil
- 1/4 cup rice wine vinegar
- 2T honey
- Slurry, as needed
DIRECTIONS
Seed and devein the peppers and medium dice them. Warm the oil in a sauté pan over medium heat, add peppers and cook until the peppers are tender. Stir in the rice wine vinegar and honey. Reduce heat and simmer for 5 to 10 minutes. If a thicker consistency is desired, make a slurry (equal parts flour and water mixed together) and add in small increments until satisfied.
Yields About 1 Cup
NOTE: The restaurant serves this jam as a garnish on Duck Wonton Dumplings, though the vibrant flavor can be used to enhance a wide range of dishes.
