Grilled Ribeye

INGREDIENTS
- 1 T olive oil
- 1 Spanish onion, small diced
- 1/2 cup apple cider vinegar
- 1 red pepper, medium diced
- 2 T sugar
- 1/2 tsp. salt
- 2 bananas, diced
- Chopped parsley (optional)
- 4 ribeye steaks (ounces are your choice)
DIRECTIONS
Heat olive oil in a saucepan at medium heat. Add onions and sweat until tender, but not caramelized. Add cider vinegar and reduce for 10 minutes on low heat. Add red peppers, sugar and salt and continue cooking for 3 minutes. Remove from heat and fold in the bananas gently. For color, add parsley if desired. Cook the ribeyes to your liking on a grill or pan and serve with the chutney.
