Bacon Lollipops with Root Beer Barbecue Sauce

INGREDIENTS

  • 2 lb. slab of bacon
  • 16 lollipop sticks

Root beer barbecue sauce

  • 2 cups ketchup
  • 1 cup root beer (look for an artisan variety)
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 2 T molasses
  • Pinch of salt

DIRECTIONS

Cut bacon into 2-ounce rectangles. Don’t worry about making them perfectly even; the pieces may be irregular, depending on the shape of the bacon slab. Place bacon pieces on a flat baking rack positioned on top of a baking sheet with sides (to catch drips). Place in a 300°F oven and bake for one hour before checking for level of doneness: The bacon should be deep golden brown and slightly crispy-looking around edges when finished. Continue to bake, checking every 15 minutes for up to 1 additional hour. Poke a lollipop stick in one of the short sides of portion and serve with root beer barbecue sauce. When serving a crowd, figure 2 to 3 pieces per person.

For the barbecue sauce: Place all ingredients in a saucepan and bring to a simmer over medium heat. Reduce to low heat and continue cooking for about 1 hour, stirring occasionally, until sauce thickens to your liking. Cool to room temperature before serving as a dip with the lollipops. The sauce can also be made up to 3 days ahead of time and stored in the refrigerator.
